Whether you forgot to get dinner started early or had a last minute craving strike, you can still have pulled pork sandwiches for dinner thanks to the Instant Pot! Instant Pot Pulled Pork is every bit as delicious as the slow cooked version but comes together in a fraction of the time.
Rinse pork roast under cold water and pat dry with paper towels. Slice into 4-6 smaller pieces as needed to fit into Instant Pot.
Place onions in Instant Pot. In a small bowl, combine brown sugar, paprika, kosher salt and pepper; mix thoroughly. Rub mixture all over roast pieces and place the roast on top of the onions. Add the chicken broth or stock to the pot.
In a medium bowl, combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper; whisk to combine. Drizzle about 1/2 of vinegar mixture over roast. Cover and refrigerate remaining vinegar mixture.
Lock Instant Pot lid, making sure the pressure valve is closed; cook on high pressure for 70 minutes. Allow pressure to release naturally; this will take around 20 minutes.
Remove meat and onions; drain. Chop or shred meat and onions. Serve with remaining vinegar mixture or your favorite barbecue sauce.
