Fiesta ranch dip is a zesty take on everyone’s classic. Dress up homemade ranch seasoning with corn, Rotel, and cheese for a dip that will disappear in a flash at your next party.
¼cupcooked and finely crumbled bacon or bacon bitsoptional
Salt and pepper to taste
Instructions
Combine all ingredients in a large bowl and stir to combine. Taste for seasoning, adding salt and pepper as desired.
Cover and chill for at least 1-2 hours before serving with corn chips or tortilla chips.
Notes
2 tablespoons homemade ranch seasoning mix equals 1 (1-ounce) packet of store-bought ranch mix. Feel free to use the packaged version if you prefer.I recommend using no-salt-added canned corn, beans, and Rotel so that you can control the amount of salt in this recipe. If you cannot find no-salt-added versions, keep in mind that you will not need to add as much or any salt to the final dip.For a spicier dip, feel free to add a few dashes of your favorite hot sauce.Makes about 6 cups.
