Banana Cream Pie Eclair Cake

If you’re looking for a quick and easy crowd-pleasing dessert, this Banana Cream Pie Eclair Cake is for you! Layers of graham crackers, pudding, and sliced bananas make this icebox cake taste just like your favorite banana pudding.

Ingredients

  • 2 3.4-oz packages instant banana cream pudding mix
  • 1 8-oz tub plus 2 cups frozen whipped topping, thawed, divided
  • 3 cups milk
  • 1 14-oz box graham cracker squares
  • 3 bananas divided

Instructions

  • In a medium bowl, thoroughly mix the pudding mix, the 8-oz container of whipped topping, and milk.
  • Arrange a single layer of graham cracker squares in the bottom of a 13×9 inch baking pan. 
  • Evenly spread half of the pudding mixture over the crackers. Top with 1 sliced banana. Top with another layer of graham crackers and the remaining pudding mixture, followed by a second sliced banana. Top with a final layer of graham crackers.
  • Spread the remaining 2 cups of whipped topping onto the top of the cake. Cover and chill for at least 4 hours. Before serving, top with the remaining banana.
