Well after being M.I.A. for a couple of weeks, I am back to my beloved baking and TwD! Life got very hectic for a quick minute and something had to give…unfortunately that something was baking and my blog. I also apologize for not posting the winner of the tarts which is…Prudy! You can click here to check out her awesome blog!
I have been all about all things fall…especially pumpkin and apples, so I was quite excited for this recipe! I could not find raw sunflower seed kernels to save my life so I just omitted them. I added pecans, craisins, and white chocolate chips to the batter. I was very impressed with the way these muffins baked up; I filled them to the brim and there was no sign of overflow…I was left with 12 huge, gorgeous muffins. All in all I really enjoyed this recipe and will definitely make these again.
Glad to see you back! We all have CRAZY times, and the blog is always th first to go on the back burner!
Love the muffins, and LOVE the red liners.

Those are actually paper muffin liners that I purchased from World Market.

Hey Jamie — glad you’re back! We’ve missed you! Your muffins look great — mine did not bake up quite as well as yours did, but we loved them anyway. I LOVE your additions of the craisins and white chocolate chips. I see that you’ve updated your pumpkin roll post — off to read that now!
they look beautiful! i like the red wrapper. white choc/cranberries is always a good combo :)
Yours look great.
Do you like those silicone muffin cups? I have considered purchasing them, but the whole silicone thing has me a bit leery.
Ooh, good call on the white choco chips! They look yummy!
Glad you are back baking with us! Did I miss a giveaway :( Unfortunately, I am allergic to white chocolate, but your muffins sound delicious! And they look great too!!
I thought about adding white choc chips too, but only had milk choc chips so that’s what went in! I think either way would be delicious! I did stick with the golden raisins, I only had cherry Craisins and that didn’t sound good with pumpkin LOL Yours came out beautiful!
White chocolate… Yum!! They look delicious!
I was in awe of how these rose too – up, but not out! They look wonderful, and I’m glad to see you’re back from hiatus :)
