One of the best things about Spring? Meyer Lemons. Seriously, there’s nothing that speaks to the epitome of spring to me like Meyer lemons. Sweet, bright, and the perfect blend of lemons and mandarin oranges, they make anything taste amazing.
From iced tea to cupcakes, Meyer Lemons add a citrus-y kick to all that you love. That’s why I made Meyer Lemon Cookies for Food Fanatic today. They’re so good – light, sweet, and with an added spring kick of chewy coconut flavor. What more could you ask for, I tell ya.
This Meyer Lemon Cookies recipe couldn’t be simpler, or sweeter. It’s a riff off a cookie that’s been on my site for a while, and been a favorite for just as long. Chewy Lime Coconut Cookies are fantastic, but if you aren’t aware, there’s actually a lime shortage right now! This crazy weather over the last year caused a huge shortage, and in most places, one little lime is running over a $1.19 each. That. Is. Crazytalk.
Solve your citrus craving instead by making Meyer Lemon cookies. And Meyer Lemon Cake. Because we need citrus-y sweet things to celebrate the gorgeous weather we’re finally having. They’re perfect with a cup of tea, so why not plan an impromptu tea party with your favorite little girls?
I can’t tell you how nice it is to finally be able to take my baby outside, and these cookies put me in mind of the Springs in her future. I can’t wait to be able to have picnics and tea parties with her too. I can just imagine her sweet face while we play outside on a blanket, stuffed animals in attendance for the finest tea party in the land.
Elle may be a little young for tea parties this Spring, but Mama’s not. I’ll be enjoying a few of these babies this afternoon with a steaming cup of Earl Grey tea, thank you very much. Won’t you join me?
Do these freeze well?joÂ
Hello! I haven’t attempted freezing this recipe, so I am not sure of the result. If you happen to give it a try, I’d love to know how they turned out. Thanks so much for stopping by.

Can the egg be omitted or substituted? Allergies!
You can try 1 mashed banana or 1/4 cup unsweetened applesauce for every egg. I hope you like it!
Made these as one of the cookies in my assorted cookie tray for Christmas this weekend. They turned out great! My husband who doesn’t like coconut didn’t realize it was in there and he enjoyed them.
I’m so glad to hear that, Kimberly!
Thank you for sharing this! I’ve made these cookies a few times since finding your blog and they are delicious. My neighbor said they are the most delicious cookies she has ever eaten and I agree. I’m sharing a link to your recipe on my blog today. :)
Hello, I love lemon and made these, followed them exactly, were yummy but SUPER flat??? looking nothing like the picture…advice ? thanks, love you site :)
Pam-
I have made these so many times and they’ve never turned out flat. I’d recommend chilling your dough for a bit before baking, that may help.

‘Tis totally the season of summer–I don’t know if y’all felt a heat wave like ours a week and a half ago, but breaking out a sweat just strolling outside is enough to convince me that these cookies should be made. Thanks for sharing!
Any suggestion for a coconut substitution? Allergies! But I loooooove anything lemony.
Tabitha-
I would simply omit the coconut. Thanks for stopping by!

Lemon and coconut? Right up my alley! I’m definitely pinning this and making it soon. (seriously, I love lemon in baked goods – maybe even more than chocolate, and that’s saying something)
I always like to welcome and enjoy spring with a wide variety of lemon based recipes. This meyer lemon cookies looks very delicious. Can’t wait to try them.
Yes, yes, yes. Tea parties for the WIN!! Love these pretty lemon cookies!
