If your calendar looks anything like mine – you’re probably only a couple of days away from crazy. My December is brimming with holiday parties, potlucks, shopping dates, and family gatherings. And with all these festive commitments usually comes food and lots of it.

Along with arming you with a bunch of cookie recipes, I also wanted to provide you with a couple of simple appetizers that are sure to make your party prep a little easier and of course – more delicious!

We couldn’t get enough of this Feta Cheese Ball. We both kept sneaking into the fridge to steal a nibble throughout the day, even though we were supposed to be saving it for my co-workers.

The feta, cream cheese, oregano and garlic blend harmoniously to create an irresistible appetizer that will keep your guests congregated around the appetizer table long enough for you to finish all those last minute dinner preps that didn’t get done because the doorbell started ringing.

I love the fact that it’s simple, requires minimal prep work and it doesn’t require you to turn on the oven – especially when there’s cookies to made! Surround the Feta Cheese Ball with a variety of crackers, flat bread, and olives and you’ll create the perfect party platter for any event.

Feta Cheese Ball

Ingredients:

2 (8 ounce) packages cream cheese, softened 4 ounces feta cheese, crumbled 2 tablespoons olive oil 2 green onions, finely chopped 2 cloves garlic, minced 2 1/2 teaspoons dried oregano freshly cracked black pepper to taste

Directions:

1. In a large bowl using an electric hand mixer, combine cream cheese, feta cheese, olive oil, green onions, garlic, oregano and pepper. 2. Cover and chill for 2 hours. 3. Remove mixture from refrigerator and form into 1 or 2 balls. Wrap in plastic wrap and refrigerate until ready to serve. 4. Serve with crackers, flatbread, olives, etc.

    The fun thing about cheese rolls truly lies in their versatility; the combinations are endless and honestly I think eating the “snack” food is so much more fun than the main course.

    Thanks for the recipe. Guess what I will be bringing for this weeks pot luck. Here is my favorite feta recipe:)

    4 boneless chicken breasts
    12 oz of feta (atleast)
    ritz crackers
    butter

    1. Melt 2 tbls of butter in bottom of 8×8 baking dish.
    2. Cut each breast into 3 large pieces and layer in bottom of dish.
    3 Top chicken with crumbled feta
    4. Crush 1 sleeve of ritz crackers and mix with 1 tbls of melted butter. Sprinkle crumb mixture on top of feta.
    5. Bake at 350 for about 45 min.
    Thats it. Super easy and super delicious. I have also used the tomato basil feta with this as well as the plain. Enjoy

    What is up with cheese balls? I just think it’s amazing to get a big ball of cheese. I love the idea of feta and cream cheese, I will so have to make this! Having it with a side of homemade crackers, yum, yum!!

    this is my favorite way to use feta:

    Feta, Parsley and Cous Cous Salad

    Ingredients:

    -1 package israeli cous cous (the large ball kind)
    -1/3 lb feta cheese
    1 pint cherry tomatoes, halved
    large bunch of parsley, chopped (thyme works well too if you prefer)
    olive oil
    salt and pepper

    Cook the cous cous according to package directions. Remove from heat and put into large glass serving bowl. Add about a quarter cup olive oil, tomatoes, feta cheese, herbs, and salt and pepper to taste. Toss well. Cover and chill for a few hours to meld the flavors. Makes a great summer salad for picnics or a BBQ.

    My boyfriend loves Feta cheese! This would be the perfect treat for him, and a great way to use one of those ginormous containers from Costco :)

    My recipe is a modification from the Chicken and sun dried tomato bruschetta recipe from allrecipes.com and it is SOOOO GOOD! I am Armenian and love feta cheese and kalmata olives, so this is a great mixture. My family loves this recipe too.

    Ingredients
    2 skinless, boneless chicken breast halves
    1 1/4 cups Italian salad dressing, divided
    1/3 cup crumbled feta cheese
    8 sun-dried tomatoes, packed without oil, chopped
    handful of kalmata olives, chopped
    1/4 cup olive oil

    Directions
    1. Place the chicken and 1 cup salad dressing in a bowl. Cover, and marinate at least 3 hours in the refrigerator.
    2. Preheat the oven to 350 degrees
    4. In a large bowl, feta cheese, sun-dried tomatoes, kalmata olives and remaining dressing.
    5. Bake for 15-20 min or until chicken is done.
