I love finding new ways to use my homemade bisquick mix. It’s one of my very favorite kitchen staples to keep on hand, and it makes so many recipes so quick and easy.

Recipes like apple cobbler and impossible coconut pie are staples for us, since I can toss them together in almost no time. And with our packed schedule these days, fast is necessary. 

These 7UP biscuits are yet another easy bisquick recipe. They have an unusual mix of ingredients that turns into super fluffy, buttery, tender biscuits that you’ll want to eat for every meal of the day.

What are 7UP biscuits?

If you love how easy it is to make bisquick biscuits, you’re going to absolutely freak out over these 7UP biscuits.

7UP biscuits are bisquick biscuits taken to the next level. They have only 4 ingredients – one of those is 7UP, so that’s where the name comes from!

I can’t really tell you why this recipe works so well (it has to do with the carbonation from the soda), but I can tell you that these are some of the most delicious biscuits I’ve had in a while. 

I’ve seen some people compare these to KFC biscuits. It’s been a long time since I’ve had a KFC biscuit, but that’s a pretty good comparison from what I can remember. 

They’re tender, buttery, and super light and airy. They’d be incredible topped with sausage gravy, slathered with homemade butter and raspberry jam, or alongside a bowl of corn chowder or beef and barley stew.

How to make 7UP biscuits

If you guessed that this recipe was going to be easy since it only uses 4 ingredients, you’d be right!

Ingredients you’ll need

To make these biscuits, you will need:

  • 4 tablespoons of salted butter: Salted butter adds the best flavor to these biscuits. 
  • 2 ½ cups of Bisquick mix: You can use store-bought bisquick mix, but I always love using my homemade bisquick for recipes like this
  • ½ cup of sour cream: Sour cream makes these 7UP biscuits slightly tangy and super tender.
  • ½ cup of 7UP or Sprite: Any clear carbonated soda will work for this recipe, so use your favorite brand.

Making these biscuits

These 7UP biscuits are baked in an 8×8-inch pan. While your oven preheats to 425°F, add the butter to the pan and pop it into the oven for a few minutes while it preheats, for about 3-5 minutes.

When the butter is melted, pull the pan from the oven and set it aside.

In a large bowl, add the sour cream to 2 ¼ cups of the bisquick mix. Using a pastry blender, a fork, or even two knives, cut the sour cream into the bisquick. You want the sour cream to be well distributed and the mixture to be shaggy.

Stir in the soda until just combined. The dough is going to be sticky!

Sprinkle the countertop with half of the remaining bisquick. Turn the dough out onto the counter and sprinkle the top of the dough with the rest of the baking mix.

Use your hands to pat the dough into a square about 6×6 inches. Use a floured dough blade, pizza cutter, or large knife to cut the dough into 9 squares.

Place the biscuits into the pan on top of the melted butter. Bake them for 15-16 minutes or until the tops are golden.

Storage and reheating

7UP biscuits are the very best the day they are made, but you can store them in an airtight container or zip-top bag at room temperature for 1-2 days.

If you want to reheat the biscuits, I suggest wrapping them in foil and warming them in a toaster oven, air fryer, or low oven for a few minutes.

If you want to freeze the biscuits, make the dough and cut it into squares. Place the biscuits on a parchment-lined baking sheet. Put the sheet in the freezer for 1-2 hours, until the biscuits are frozen through.

Store the frozen biscuits in a zip-top bag for up to a month. When you’re ready, bake them in the buttered pan according to the recipe directions, adding a few extra minutes of baking time as needed if baking from frozen.

FAQs

Can I use diet soda in this recipe?

Diet 7UP or Sprite will work in this recipe, but keep in mind that it will give the biscuits a slightly different flavor. If you don’t mind that, then feel free to use it here.

What is bisquick mix? We don’t have it in my country.

Bisquick mix is a baking mix commonly available here in the US. If you live somewhere where you can’t access store-bought bisquick, I have a recipe for homemade bisquick that will work great in this recipe.

Once you’ve made your homemade bisquick, you can also use it in recipes like bisquick pancakes, bisquick waffles, and easy blackberry cobbler.

Can I use a 9×9-inch pan instead of an 8×8-inch pan?

Yes! The biscuits may spread out a bit more since they will have more space, so you may need to reduce the baking time by 1-2 minutes.

Can I cut these 7UP biscuits into circles instead of squares?

You sure can. You can use a floured biscuit cutter to cut the dough into 9 circles. Keep in mind that you will need to re-roll and cut the scraps once or twice to get 9 biscuits when cutting them into circles.

  • Preheat oven to 425°F.
  • Place butter in an 8×8-inch pan. Place pan in the oven to let the butter melt while the oven is preheating, about 3-5 minutes. Make sure to pull the pan from the oven once the butter is melted so it does not brown.
  • In a large bowl, add 2 ¼ cups of the baking mix and the sour cream. Use a pastry blender, a fork, or two knives to cut the sour cream into the baking mix until the sour cream is well distributed and the mixture is shaggy.
  • Stir in the 7UP or Sprite. The dough will be sticky.
  • Sprinkle a clean work surface with half of the remaining baking mix. Turn the dough out onto the work surface and sprinkle the top of the dough with the remaining mix.
  • Using your hands, pat the dough into a square roughly 6×6 inches. Use a floured dough blade, pizza cutter, or knife to cut the dough into 9 squares.
  • Place the dough squares in the pan on top of the melted butter. Bake at 425°F for 15-16 minutes, or until the tops are golden.
