Now that Easter is over, who is left with a fridge full of rainbow hued hard boiled eggs? Eating them plain can get, well, plain! It’s time to get creative and flex that culinary muscle because, lets face it… salt and pepper is no longer cutting it.

Don’t worry, the Easter hunt didn’t end with the eggs. I’ve searched the web and found some amazing recipes to put those yummy eggs to use!

    We love Egg & Cobb Salad! Or yummy avocado toast with egg sliced on top! Simple yet sumptuous :)

    We’ve long had a tradition of doing Creamed Eggs on Toast Points for Easter. My kids and I both love them. So simple too; chopped, hard boiled eggs are folded into a creamy white sauce with a bit of dry mustard and then it’s pour into toast points and garnished with chives. I actually missed them this year when I didn’t have time to make the eggs; that’s how good they are!

    I’ve long made Creamed Eggs on Toast for Easter. Chopped hard boiled eggs are folded into a white sauce with a bit of dry mustard and served over buttered toast points and garnished with chives. We LOVE them and they made eggs disappear.

    I have to go with plain old egg salad – that’s definitely our favorite way to use up hard-boiled eggs. There are some great ideas here though – I’ve always wanted to make Scotch Eggs.

    Such a great round up of things to do with those hard boiled eggs! Eating them plain certainly can get a little dull, but all these recipes look amazing! Craving some hard boiled eggs now ;)
